This recipe is super simple and a breeze to prepare, especially if one does a little (and I mean little) prep work ahead of time. The flavors some together in a light, but satisfying way. A perfect warm weather, or frankly anytime, meal.

Pork Chops with Apricot Sauce
A lovely, cold weather, comfort food dinner, served with cheddar cheese grits and tomatoes and mozzarella.
Everyone enjoys this simple meal. I like to serve it with thin spaghetti tossed with a lemon butter sauce and sliced tomatoes with a drizzle of balsamic glaze.
A nice, simple and tasty dinner, but it helps to do some prep work to make things go smoothly when preparing this dish – combine stock and mustard, chop shallot, measure out lemon juice and Worcestershire sauce. I served this with mashed potatoes and steamed asparagus tossed with melted butter and lemon juice.
